Description

Infuse your kitchen with the aromatic warmth of masala chai through these tender, spice-kissed sugar cookies. Topped with a creamy eggnog glaze, they offer a sophisticated and cozy twist on a viral fan favorite that is perfect for any tea-time gathering.


Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar (plus 1/4 cup for rolling)
  • 1/2 cup powdered sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 chai tea bag (cut open) or 1 teaspoon chai spice blend
  • 1 cup powdered sugar (for glaze)
  • 1 tablespoon melted butter (for glaze)
  • 3 tablespoons eggnog or whole milk (for glaze)


Instructions

  1. In a stand mixer fitted with the paddle attachment, cream the room-temperature butter, vegetable oil, 1/2 cup granulated sugar, and 1/2 cup powdered sugar for 2 minutes until pale and fluffy.
  2. Add the egg and vanilla extract to the mixture, beating until just incorporated.
  3. In a medium bowl, whisk together the flour, baking soda, salt, and the contents of the chai tea bag or your spice blend.
  4. Slowly add the dry ingredients to the mixer on a low speed, beating until the white streaks disappear, then cover and chill the dough in the refrigerator for at least 1 hour.
  5. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  6. Scoop heaping tablespoon portions of the chilled dough, roll them into smooth balls, and then roll each ball in the remaining 1/4 cup of granulated sugar.
  7. Place the dough balls on the prepared sheets 2 inches apart and bake for 9 to 12 minutes until the edges are set and very pale gold.
  8. Let the cookies cool completely on the baking sheet before whisking together the glaze ingredients and spooning them over the top.

Notes

To make these ahead of time, you can freeze the rolled dough balls (without the sugar coating) for up to three months; simply thaw in the refrigerator overnight before rolling in sugar and baking. For a cleaner look, use a piping bag to drizzle the glaze in a zig-zag pattern across the cookies once they have cooled entirely.
