Description

These decadent Smore Cookies 2 feature a molten marshmallow core encased in a rich, buttery dough studded with chocolate chips and crunchy graham cracker shards. Perfect for satisfying campfire cravings year-round, they offer a delightful contrast between a crisp exterior and a gooey, stretchy center.


Ingredients

  • 120 grams all-purpose flour
  • 6 tablespoons unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 3 large marshmallows, halved
  • 4 graham cracker sheets


Instructions

  1. In a medium-sized bowl, whisk together the all-purpose flour, baking soda, and salt until evenly distributed.
  2. In a separate bowl, beat the softened butter with granulated sugar for one minute, then add the brown sugar and beat for another 30 seconds until smooth.
  3. Add the large egg and vanilla extract to the butter mixture, beating until the dough is unified.
  4. Slowly add the dry ingredients to the wet mixture on low speed, stopping as soon as the flour disappears, then fold in the chocolate chips.
  5. Scoop the dough into portions and flatten slightly; place a marshmallow half in the center and seal the dough around it firmly.
  6. Break three graham cracker sheets into shards and press them into the surface of each dough ball.
  7. Place the dough balls on a plate and refrigerate for 30 minutes to solidify the fats.
  8. Preheat your oven to 350F and bake the chilled cookies on a baking sheet for 11 to 13 minutes until the edges are golden brown.
  9. Remove from the oven and immediately sprinkle with crushed crumbs from the remaining graham cracker sheet; let cool completely on the sheet.

Notes

To ensure the marshmallow center stays perfectly gooey without leaking, make sure there are no thinned-out areas of dough when sealing the core. If you enjoy a deeper flavor, try browning the butter and letting it solidify slightly before creaming to add a nutty, toasted note to the base.
