Ingredients
- 120 grams all-purpose flour
- 6 tablespoons unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- 3 large marshmallows, halved
- 4 graham cracker sheets
Instructions
- In a medium-sized bowl, whisk together the all-purpose flour, baking soda, and salt until evenly distributed.
- In a separate bowl, beat the softened butter with granulated sugar for one minute, then add the brown sugar and beat for another 30 seconds until smooth.
- Add the large egg and vanilla extract to the butter mixture, beating until the dough is unified.
- Slowly add the dry ingredients to the wet mixture on low speed, stopping as soon as the flour disappears, then fold in the chocolate chips.
- Scoop the dough into portions and flatten slightly; place a marshmallow half in the center and seal the dough around it firmly.
- Break three graham cracker sheets into shards and press them into the surface of each dough ball.
- Place the dough balls on a plate and refrigerate for 30 minutes to solidify the fats.
- Preheat your oven to 350F and bake the chilled cookies on a baking sheet for 11 to 13 minutes until the edges are golden brown.
- Remove from the oven and immediately sprinkle with crushed crumbs from the remaining graham cracker sheet; let cool completely on the sheet.
