Description

Ingredients

  • 1 stick butter, softened
  • 1 stick margarine, softened
  • 1/2 cup powdered sugar (for dough)
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 can peach pie filling, fruit chopped into small pieces
  • 1/2 cup powdered sugar (for glaze)
  • 2 teaspoons milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract (for glaze)


Instructions

  1. Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius) and lightly coat two cookie sheets with cooking spray or line with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and softened margarine using an electric hand mixer until the mixture is light and fluffy.
  3. Using a sturdy spoon, stir in the powdered sugar, all-purpose flour, and vanilla extract until a smooth, pliable dough forms.
  4. Roll the dough into balls approximately two inches in size and place them on the prepared baking sheets.
  5. Use a rounded measuring spoon to press a deep indentation into the center of each ball, smoothing any cracks with your thumb.
  6. Spoon the finely chopped peach pie filling into each indentation.
  7. Bake for 12 to 15 minutes until the cookies are firm to the touch; remove and allow to cool completely on a wire rack.
  8. In a small bowl, whisk together the glaze ingredients (powdered sugar, milk, cinnamon, and vanilla) until smooth, then drizzle over the cooled cookies.

Notes

For the best results, ensure your butter and margarine are truly at room temperature before creaming to avoid a lumpy dough. If you find the dough too soft to handle after rolling, chilling the formed balls for 10 minutes prior to baking will help them maintain their shape and prevent spreading.
