Description

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 2 cups semi-sweet chocolate chips
  • 24 Double Stuffed Oreo cookies


Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a stand mixer or large bowl, cream together the softened butter, granulated sugar, and light brown sugar until the mixture is light and fluffy.
  3. Add the large eggs one at a time, beating well after each addition to maintain the emulsion, then stir in the pure vanilla extract.
  4. In a separate medium bowl, whisk together the all-purpose flour, kosher salt, and baking soda to ensure even distribution.
  5. Slowly add the dry ingredients to the wet mixture with the mixer on its lowest setting, mixing only until a few streaks of flour remain.
  6. Fold in the semi-sweet chocolate chips by hand using a spatula until just incorporated.
  7. Using a large cookie scoop, place one portion of dough on top and one portion on the bottom of an Oreo cookie, then gently mold and seal the dough to completely encase the sandwich cookie.
  8. Place the stuffed dough balls on prepared baking sheets at least three inches apart and bake for 9 to 13 minutes until the edges are honey-gold.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

To ensure the dough stays easy to handle while stuffing the cookies, try chilling the dough for about 30 minutes before assembly. Make sure the Oreo is completely sealed within the dough to prevent the cookie from leaking or spreading unevenly during the baking process, and use a kitchen scale for the flour to ensure the most accurate texture.
