Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup dark brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 tablespoon molasses
- 1 teaspoon pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 3 cups quick oats
- 1/2 cup unsalted butter, softened (for filling)
- 2 cups confectioners’ sugar
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- 1 pinch salt
Instructions
- Preheat your oven to 375°F (191°C) and line large baking sheets with parchment paper or silicone mats.
- In a large mixing bowl, beat the softened butter with dark brown and granulated sugars for about 3 minutes until light and fluffy.
- Add the egg, vanilla extract, and molasses, then beat on high speed for 1 minute until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, cloves, and quick oats.
- Slowly add the dry ingredients to the wet mixture on low speed until a thick, sticky dough forms.
- Scoop heaping tablespoons of dough (about 45 grams each) and place them 3 inches apart on the baking sheets.
- Bake for 10 to 13 minutes until the edges are just barely golden and centers are soft; do not overbake.
- Allow cookies to rest on the sheet for 10 minutes before transferring to a wire rack to cool completely.
- Prepare the filling by beating butter and confectioners’ sugar, then whipping in the heavy cream, vanilla, and salt until light and airy.
- Spread or pipe the cream filling onto the flat side of half the cookies, then top with the remaining cookies to form sandwiches.
Notes
For the best results, ensure your egg and butter are at room temperature to create a stable emulsion and consistent texture. If you only have old-fashioned oats, pulse them briefly in a food processor to achieve the smaller texture of quick oats, which is essential for the signature soft bite of these pies.
