Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup unsalted butter (for frosting), softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 2 tablespoons milk
  • Pink gel food coloring
  • Multi-colored sprinkles


Instructions

  1. In a medium bowl, whisk together the flour, salt, baking powder, baking soda, and cornstarch until perfectly blended.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together for about three minutes until pale yellow and fluffy.
  3. Add the egg, vanilla, and almond extract to the butter mixture, beating until well combined.
  4. Mix in the sour cream using a spatula, scraping down the sides of the bowl to ensure full incorporation.
  5. Turn the mixer to the lowest speed and slowly add the flour mixture until just combined and no white streaks remain.
  6. Pat the dough into a thick disk, wrap tightly in plastic wrap, and refrigerate for at least one hour.
  7. Preheat your oven to 375F and roll the dough out to 1/4 inch thickness on a lightly floured surface.
  8. Cut into rounds, transfer to a parchment-lined baking sheet, and bake for 8 to 9 minutes until set but not browned.
  9. Whip the frosting ingredients together until creamy, tint with pink gel coloring, and frost the completely cooled cookies.
