Ingredients
- 2 1/2 cups all-purpose flour
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg, room temperature
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup unsalted butter (for frosting), softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- 2 tablespoons milk
- Pink gel food coloring
- Multi-colored sprinkles
Instructions
- In a medium bowl, whisk together the flour, salt, baking powder, baking soda, and cornstarch until perfectly blended.
- In a large mixing bowl, beat the softened butter and granulated sugar together for about three minutes until pale yellow and fluffy.
- Add the egg, vanilla, and almond extract to the butter mixture, beating until well combined.
- Mix in the sour cream using a spatula, scraping down the sides of the bowl to ensure full incorporation.
- Turn the mixer to the lowest speed and slowly add the flour mixture until just combined and no white streaks remain.
- Pat the dough into a thick disk, wrap tightly in plastic wrap, and refrigerate for at least one hour.
- Preheat your oven to 375F and roll the dough out to 1/4 inch thickness on a lightly floured surface.
- Cut into rounds, transfer to a parchment-lined baking sheet, and bake for 8 to 9 minutes until set but not browned.
- Whip the frosting ingredients together until creamy, tint with pink gel coloring, and frost the completely cooled cookies.
Notes
For the most authentic texture, ensure your sour cream is full-fat, as the extra moisture is key to the cookie’s tenderness. If you are baking in a warm kitchen, you may need to return the dough to the fridge between batches to keep it firm enough for clean cutting.
