Ingredients

  • 2 1/4 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Fine Sea Salt
  • 1 cup Unsalted Butter, cool room temperature
  • 1 cup Granulated Sugar
  • 2 tablespoons Fresh Lemon Zest
  • 1 Large Egg
  • 2 cups Powdered Sugar, sifted
  • 3-4 tablespoons Fresh Lemon Juice


Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a small mixing bowl, whisk together the flour, baking powder, and fine sea salt until well combined.
  3. In a large bowl, use an electric mixer with a paddle attachment to cream the cool butter, granulated sugar, and lemon zest for 3 to 4 minutes until light and fluffy.
  4. Add the egg and beat for one minute until the mixture is smooth and fully incorporated.
  5. Turn the mixer to low and slowly add the dry ingredients, mixing just until no white streaks remain.
  6. Using a medium cookie scoop, drop 1 1/2-tablespoon sized balls onto the sheets and flatten them gently to 1/3-inch thickness.
  7. Bake for 12 to 14 minutes until just set, then cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Whisk the powdered sugar and lemon juice into a thick glaze, spoon over cooled cookies, and allow to set for 30 minutes.

Notes

To ensure the best texture, avoid over-mixing the dough once the flour is added. If you prefer a more intense lemon flavor, feel free to add a half teaspoon of lemon extract to the wet ingredients. Store these cookies in an airtight container at room temperature for up to three days to maintain their softness.
