Ingredients
- 2 1/4 cups All-Purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Fine Sea Salt
- 1 cup Unsalted Butter, cool room temperature
- 1 cup Granulated Sugar
- 2 tablespoons Fresh Lemon Zest
- 1 Large Egg
- 2 cups Powdered Sugar, sifted
- 3-4 tablespoons Fresh Lemon Juice
Instructions
- Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
- In a small mixing bowl, whisk together the flour, baking powder, and fine sea salt until well combined.
- In a large bowl, use an electric mixer with a paddle attachment to cream the cool butter, granulated sugar, and lemon zest for 3 to 4 minutes until light and fluffy.
- Add the egg and beat for one minute until the mixture is smooth and fully incorporated.
- Turn the mixer to low and slowly add the dry ingredients, mixing just until no white streaks remain.
- Using a medium cookie scoop, drop 1 1/2-tablespoon sized balls onto the sheets and flatten them gently to 1/3-inch thickness.
- Bake for 12 to 14 minutes until just set, then cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
- Whisk the powdered sugar and lemon juice into a thick glaze, spoon over cooled cookies, and allow to set for 30 minutes.
Notes
To ensure the best texture, avoid over-mixing the dough once the flour is added. If you prefer a more intense lemon flavor, feel free to add a half teaspoon of lemon extract to the wet ingredients. Store these cookies in an airtight container at room temperature for up to three days to maintain their softness.
