Description

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1 cup unsalted butter, cool room temperature
  • 1 cup granulated sugar
  • 3 medium lemons, zested and juiced
  • 1 large egg
  • 1 1/2 cups powdered sugar, sifted


Instructions

  1. Preheat oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a small bowl, whisk together the all-purpose flour, baking powder, and fine sea salt.
  3. In a large bowl, use an electric mixer to beat the butter, granulated sugar, and lemon zest for 3 to 4 minutes until light and fluffy.
  4. Add the egg and beat for another minute, scraping down the sides of the bowl to ensure a thorough mix.
  5. Turn the mixer to low speed and add the flour mixture, blending only until the white streaks disappear.
  6. Using a cookie scoop, drop 1 ½-tablespoon sized balls onto the sheets and gently flatten them to 1/3-inch thickness.
  7. Bake for 12 to 14 minutes until the edges are just barely golden, then remove from the oven to cool completely.
  8. Whisk the powdered sugar and fresh lemon juice together in a small bowl until the glaze is thick but pourable.
  9. Spoon the glaze over the cooled cookies and let them sit for 30 minutes to set before serving.

Notes

For the most intense citrus flavor, rub the lemon zest into the granulated sugar with your fingertips before creaming it with the butter. This releases the aromatic oils from the zest into the sugar, ensuring every bite is packed with brightness.
