Description

Ingredients

  • 2 cups Super-fine Almond Flour
  • 1/2 cup Swerve Brown sweetener
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 large Egg
  • 1/3 cup Butter, melted and cooled
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Sugar-Free Chocolate Chips
  • 1/4 cup Chopped Walnuts (optional)


Instructions

  1. Preheat your oven to 325°F (163°C) and line a large baking sheet with a silicone mat or parchment paper.
  2. In a large mixing bowl, whisk together the almond flour, Swerve Brown, baking soda, and salt until no lumps remain.
  3. Add the egg, melted butter, and vanilla extract to the dry ingredients, stirring until a soft dough forms.
  4. Fold in half of the chocolate chips and the chopped walnuts if you are using them.
  5. Roll the dough into balls about 1 1/2 inches in diameter and place them on the prepared baking sheet.
  6. Press the balls down gently until they are 3/4 inch thick and press the remaining chocolate chips into the tops.
  7. Bake for 15 to 18 minutes until the edges are puffed and slightly golden.
  8. Allow the cookies to cool completely on the baking sheet to ensure they set properly and reach the desired texture.

Notes

For the most consistent results, ensure your egg is at room temperature before mixing it with the cooled butter to prevent the fats from seizing. If you prefer a more decorative look, save a few extra chocolate chips to press into the tops immediately after the cookies come out of the oven while they are still soft.
