Ingredients

  • 8 tablespoons unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon King Arthur Pure Vanilla Extract
  • 1/4 teaspoon table salt
  • 1/2 teaspoon baking powder
  • 1 1/3 cups King Arthur Gluten-Free Measure for Measure Flour
  • 2 tablespoons granulated sugar (for coating)
  • 1 to 2 teaspoons ground cinnamon (for coating)


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease your baking sheets or line them with parchment paper.
  2. In a large mixing bowl, beat together the softened butter and 3/4 cup granulated sugar for about two minutes until the mixture is smooth and pale.
  3. Add the egg to the mixture and beat until smooth, then stir in the vanilla extract, salt, and baking powder until evenly distributed.
  4. Slowly add the gluten-free flour to the bowl and mix until the dough is fully incorporated and no white streaks remain.
  5. In a small bowl or zip-top plastic bag, combine the 2 tablespoons of sugar with the cinnamon and shake until uniform.
  6. Scoop the dough into small balls about one inch in diameter and roll them in the cinnamon-sugar mixture until completely coated.
  7. Place the balls on the prepared baking sheets 1.5 inches apart, flatten gently to 3/8-inch thickness with a flat glass, and bake for 8 to 10 minutes.

Notes

To ensure the most consistent results, allow your egg to reach room temperature before adding it to the creamed butter and sugar. If your kitchen is particularly warm, chilling the dough for just ten minutes before rolling can make it much easier to handle. These cookies store beautifully in an airtight container for up to five days, making them an excellent choice for gifting or advance meal prep.
