Description

Experience the ultimate Southern comfort with these Double Oatmeal Raisin cookies, featuring a generous helping of rolled oats for an exceptionally hearty and chewy texture. Perfectly spiced with cinnamon and dotted with plump raisins, these treats bring a sense of nostalgic warmth to any kitchen table.

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated white sugar
  • 3/4 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup raisins

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C) and line your cookie sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat together the softened butter, white sugar, and light brown sugar until the mixture is smooth and creamy.
  3. Add the two large eggs and vanilla extract to the butter mixture, beating until the batter is light and fluffy.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
  5. Gradually mix the dry flour mixture into the wet ingredients just until the white streaks disappear.
  6. Stir in the rolled oats and the raisins by hand using a sturdy spoon until they are evenly distributed.
  7. Drop rounded teaspoonfuls of the dough onto the prepared cookie sheets, leaving about two inches of space between each cookie.
  8. Bake in the preheated oven for 8 to 10 minutes, rotating the pans halfway through for even browning, until the edges are golden.
  9. Let the cookies rest on the baking sheets for two minutes before transferring them to a wire rack to cool completely.

Notes

For a thicker and more flavor-developed cookie, allow the prepared dough to rest for about ten minutes before scooping; this allows the oats to fully hydrate. To ensure your raisins stay tender and juicy, you can briefly soak them in warm water for five minutes and pat them dry before folding them into the batter.
