Ingredients

  • 1 cup salted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup salted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 1 teaspoon almond extract (for frosting)
  • 1-3 tablespoons milk
  • Neon pink food coloring (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a stand mixer, cream together 1 cup of salted butter and 1 cup of granulated sugar until the mixture is light and fluffy.
  3. Scrape down the sides and beat in the two eggs, 1 teaspoon of vanilla extract, and 1/2 teaspoon of almond extract.
  4. Slowly add 3 cups of all-purpose flour and 2 teaspoons of baking powder, mixing on low speed until just combined.
  5. Portion the dough using a large cookie scoop (3.25 oz), place 6 per pan, and gently flatten each ball with your palm.
  6. Bake for 11-13 minutes until the centers are puffed and matte; do not brown.
  7. Allow cookies to cool completely on the baking sheet to set the structure.
  8. Prepare the frosting by creaming 1/2 cup butter, then gradually adding 3 cups powdered sugar, 1 teaspoon almond extract, milk, and pink coloring.
  9. Spread a generous amount of frosting onto each cooled cookie and refrigerate until ready to serve.
