Ingredients

  • 1 cup unsalted butter, softened to room temperature
  • 1 cup packed light or dark brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon dark, unsulphured molasses
  • 1 tablespoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned whole rolled oats
  • 1 1/2 cups unsulphured raisins, soaked and blotted
  • 1/2 cup chopped toasted walnuts (optional)


Instructions

  1. In a stand mixer fitted with the paddle attachment, cream the softened butter with the brown and granulated sugars on medium speed for 3 minutes until light and smooth.
  2. Add eggs one at a time, mixing on high for 60 seconds after each addition; stir in the vanilla and molasses until the batter is a uniform amber color.
  3. Whisk the flour, baking soda, cinnamon, and salt in a medium bowl to ensure the aromatics and leavening are evenly distributed.
  4. Set the mixer to the lowest speed and gradually add the dry ingredients to the wet mixture, mixing only until the white streaks of flour disappear.
  5. Fold in the rolled oats, raisins, and walnuts by hand or on the lowest speed until the dough is heavily studded with inclusions.
  6. Cover the dough and refrigerate for 30 to 60 minutes to hydrate the oats and prevent excessive spreading.
  7. Preheat your oven to 350°F (177°C), scoop 2-tablespoon balls of dough onto parchment-lined sheets, and bake for 12 to 14 minutes until edges are golden.

Notes

For the most consistent results, always measure your flour using the spoon-and-level method rather than scooping directly with the cup. If you prefer an extra-thick cookie, increase the chilling time to two hours, which allows the molasses and spices to meld more deeply into the oats.
