Description

These decadent Cherry Cordial Cookies combine a soft, buttery base with a luscious chocolate-cherry center and a delicate white chocolate drizzle. Perfect for holiday gifting or an elegant afternoon treat, they offer a sophisticated balance of tart fruit and rich cocoa in every bite.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dried cherries, finely chopped
  • 1/2 cup cherry preserves
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup white chocolate chips, for drizzling


Instructions

  1. Preheat your oven to 350° F (175° C) and line heavy-duty baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
  3. Beat in the egg and the pure vanilla extract until fully incorporated.
  4. In a separate bowl, sift together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, then fold in the chopped dried cherries just until blended.
  6. Scoop rounded teaspoonfuls of dough onto the prepared baking sheets, leaving about two inches of space between each cookie.
  7. Bake for 10-12 minutes until the edges are a very light golden brown and the centers are still soft.
  8. While the cookies bake, heat the cherry preserves in a microwave-safe bowl for one minute until liquid.
  9. Use an immersion blender or small food processor to smooth out any large fruit chunks in the hot preserves.
  10. Stir the semi-sweet chocolate chips into the hot preserves until melted and a glossy mixture forms.
  11. Remove cookies from the oven and immediately use the back of a small spoon to press a shallow well into the center of each.
  12. Carefully spoon the chocolate-cherry mixture into the prepared wells while the cookies are still warm.
  13. Melt the white chocolate chips and drizzle them over the filled cookies in a zigzag pattern.
  14. Let the cookies cool completely on a wire rack until the centers have set into a fudge-like consistency.

Notes

For the best results, ensure your cherry preserves are high-quality and relatively thick; if the filling seems too runny after blending, let it sit for a few minutes to firm up before spooning into the cookie wells. Using a small cookie scoop will help you maintain uniform sizes for even baking across the entire batch.
