Description

Ingredients

  • 1 cup (226g) Unsalted Butter, softened
  • 1/2 cup Granulated Sugar
  • 1/2 cup Light Brown Sugar, packed
  • 1 Egg Yolk
  • 1/2 tsp Salt
  • 2 tsp Vanilla Extract
  • 1/2 tsp Almond Extract
  • 2 1/4 cups (295g) All-Purpose Flour
  • 2 tbsp Nonpareils (optional)


Instructions

  1. In a large bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar with an electric mixer on medium speed until the mixture is pale and creamy.
  2. Beat in the egg yolk, salt, vanilla extract, and almond extract until the ingredients are fully integrated and fragrant.
  3. Reduce the mixer speed to low and gradually add the all-purpose flour, mixing until a dough forms; use a spatula to fold in any remaining flour bits by hand to avoid over-mixing.
  4. Gently fold in the nonpareils if using, being careful to distribute them evenly without over-working the dough.
  5. Divide the dough into two equal portions and roll each into a log approximately two inches wide using wax paper.
  6. Slide the logs into empty paper towel rolls slit lengthwise to help maintain their round shape, then chill in the refrigerator for at least 2 to 3 hours.
  7. Preheat your oven to 350ºF (175°C) and line a baking sheet with parchment paper.
  8. Using a sharp, non-serrated knife, cut the chilled logs into quarter-inch thick slices and place them one inch apart on the baking sheet.
  9. Bake for 10-12 minutes until the edges are just barely golden, then allow the cookies to cool completely on the sheet to set.

Notes

For the cleanest slices, ensure your knife is very sharp and wipe it clean between cuts. If the dough feels too crumbly when rolling into logs, use the warmth of your hands to gently press it together through the wax paper before chilling. You can prepare the dough logs up to three days in advance or freeze them for up to two months for fresh-baked cookies on demand.
