Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon unsulphured molasses
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins
  • 1/2 cup chopped walnuts (optional)


Instructions

  1. Place raisins in a small bowl, cover with warm water for 10 minutes, then drain and blot them dry with paper towels.
  2. Preheat your oven to 350°F (177°C) and line two baking sheets with parchment paper.
  3. In a large bowl, cream the softened butter, brown sugar, and granulated sugar together on medium speed for about 3 minutes until smooth and creamy.
  4. Add the eggs one at a time, mixing on high for 1 minute, then incorporate the vanilla extract and molasses.
  5. In a separate medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
