Description

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1/4 cup fresh lemon juice
  • 1 tablespoon fresh lemon zest
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for rolling)
  • 1/2 cup confectioners’ sugar (for rolling)


Instructions

  1. In a medium bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt until well combined.
  2. In a large bowl, beat the softened butter and 1 cup of granulated sugar on medium-high speed for about 3 minutes until light and fluffy.
  3. Add the egg, fresh lemon juice, lemon zest, and vanilla extract, beating on high speed for 1 minute.
  4. Add the dry flour mixture to the wet ingredients and beat on low speed just until a thick, sticky dough forms.
  5. Cover the dough tightly and refrigerate for at least 3 hours or up to 3 days.
  6. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Scoop 1 tablespoon sized balls of dough and roll each first in granulated sugar, then generously in confectioners’ sugar.
  8. Place the balls 3 inches apart on the prepared baking sheets.
  9. Bake for 12–13 minutes until the edges are set; if they aren’t spreading by minute 9, gently bang the pan on the counter.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For the most dramatic crinkle effect, ensure the dough is thoroughly chilled so the sugars don’t dissolve too quickly into the moisture of the dough. If you prefer a more intense citrus bite, you can rub the lemon zest into the granulated sugar with your fingertips before creaming it with the butter to release even more aromatic oils.
