Description
Recreate a classic bakery favorite with these wholesome homemade peanut butter sandwich cookies. Combining the earthy crunch of rolled oats with a creamy, naturally sweetened peanut filling, these treats offer a nostalgic flavor profile made with cleaner, aromatic ingredients.
Ingredients
- 1/2 cup natural creamy peanut butter
- 1/2 cup coconut sugar
- 1 large egg, whisked
- 1 teaspoon vanilla extract
- 1 cup old fashioned rolled oats
- 1/4 cup oat flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/4 cup natural peanut butter (for filling)
- 2 tablespoons maple syrup (for filling)
- 1 tablespoon oat flour (for filling)
Instructions
- Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper or a silicone mat.
- In a large mixing bowl, combine the peanut butter, coconut sugar, and whisked egg, stirring until the mixture is smooth and glossy.
- Fold in the vanilla extract, rolled oats, oat flour, baking soda, and sea salt until a thick dough forms.
- Roll the dough into uniform balls about the size of a walnut and place them on the baking sheet, pressing down slightly with your palm.
- Bake for 8 to 10 minutes until the bottoms and edges are a light honey-gold.
- Allow the cookies to rest on the pan for five minutes before transferring them to a wire rack to cool completely.
- While the cookies cool, whisk together the extra peanut butter, maple syrup, and oat flour until thick and spreadable.
- Spread a teaspoon of filling onto the flat side of one cookie and press another cookie on top to create the sandwich.
Notes
To ensure your cookies have the perfect snap, allow them to cool entirely on a wire rack before assembling the sandwiches. If your natural peanut butter is particularly runny, you may need to add an extra tablespoon of oat flour to the filling to achieve a stable consistency. Store these in an airtight container at room temperature to maintain their crisp texture for up to three days.
