Ingredients
- 2¾ cups (345g) all-purpose flour
- 1 cup (226g) unsalted butter, room temperature
- ¾ cup granulated sugar
- 1 large egg
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon sea salt
Instructions
- Whisk flour, baking powder, and sea salt in a medium bowl until evenly distributed.
- Beat room temperature butter and granulated sugar in a stand mixer for 3 to 5 minutes until light and fluffy.
- Mix in the egg, then add vanilla and almond extracts until fully combined.
- Gradually add the flour mixture on low speed until just combined and the dough is soft.
- Divide dough into two disks, wrap in plastic, and refrigerate for at least two hours.
- Preheat oven to 350°F (175°C) and roll chilled dough to 1/4-inch thickness on a floured surface.
- Cut into shapes and bake on parchment-lined sheets for 9 to 11 minutes until edges are pale golden.
- Cool on the sheet for two minutes before transferring to a wire rack to cool completely.
Notes
For the best results, ensure your butter is truly at room temperature before creaming to achieve the maximum aeration needed for a soft bite. If you are baking in a warm kitchen, keep the portion of dough you aren’t currently rolling in the refrigerator to prevent it from becoming too sticky to handle.
