Ingredients

  • 2¾ cups (345g) all-purpose flour
  • 1 cup (226g) unsalted butter, room temperature
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt


Instructions

  1. Whisk flour, baking powder, and sea salt in a medium bowl until evenly distributed.
  2. Beat room temperature butter and granulated sugar in a stand mixer for 3 to 5 minutes until light and fluffy.
  3. Mix in the egg, then add vanilla and almond extracts until fully combined.
  4. Gradually add the flour mixture on low speed until just combined and the dough is soft.
  5. Divide dough into two disks, wrap in plastic, and refrigerate for at least two hours.
  6. Preheat oven to 350°F (175°C) and roll chilled dough to 1/4-inch thickness on a floured surface.
  7. Cut into shapes and bake on parchment-lined sheets for 9 to 11 minutes until edges are pale golden.
  8. Cool on the sheet for two minutes before transferring to a wire rack to cool completely.

Notes

For the best results, ensure your butter is truly at room temperature before creaming to achieve the maximum aeration needed for a soft bite. If you are baking in a warm kitchen, keep the portion of dough you aren’t currently rolling in the refrigerator to prevent it from becoming too sticky to handle.
