Instructions
- Melt the unsalted butter in a microwave-safe bowl and set aside until it returns to room temperature.
- In a large mixing bowl, whisk together the cooled butter, light brown sugar, and granulated sugar until well combined.
- Add the egg and vanilla extract, whisking vigorously for approximately 60 seconds until the mixture is smooth and fully emulsified.
- Whisk in the cornstarch, baking soda, baking powder, and salt until evenly distributed.
- Using a spatula or wooden spoon, gently stir in the flour just until no white streaks remain, being careful not to overmix. Fold in 1 1/4 cups of chocolate chips.
