Description

Ingredients

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure almond extract
  • 1/2 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • Colored sugar or sprinkles (optional decoration)


Instructions

  1. In a large mixing bowl, cream the softened butter with granulated and brown sugar for 5-7 minutes until light and fluffy.
  2. Beat in the room-temperature egg, almond extract, and vanilla extract until smooth and fully integrated.
  3. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture on low speed, stopping as soon as the flour disappears.
  5. Fit a cookie press with your desired disk and pack the dough into the cylinder, removing air pockets.
  6. Press the dough onto ungreased, cool baking sheets about 2 inches apart.
  7. Add colored sugar or sprinkles to the damp dough if desired.
  8. Bake at 375°F (190°C) for 7 to 9 minutes until the edges are just barely golden.
  9. Transfer the cookies to wire racks to cool completely and set their crisp structure.

Notes

To maintain the sharp definition of your cookie press designs, always use room temperature ingredients for the dough but ensure your baking sheets are chilled or completely cool between batches. If you find the dough sticking to the press, a very short stint in the fridge can help, but avoid over-chilling as the dough must remain pliable enough to be extruded through the disks.
